Banana Walnut Bread - GF, DF, Grain-Free
Today is Mother's Day and I had a great Sunday spent with my mom. We went to yoga together, and then I fixed up a Sunday Mother's Day brunch for the family. Included in the brunch was this easy and sugar-less Banana Walnut Bread. It was a huge hit!
This version is gluten-free, dairy free, and the ONLY sugar is from whole foods (banana, dates, nuts).
Serving: 8-10 slices
Time: 40 minutes
Ingredients:
1/2 Ripe banana
2 pitted medjool dates
2 tbsp nut butter (I used almond butter)
1/4 cup raw walnuts
1 cup almond flour (for non GF option, you can use whole wheat flour)
1/3 cup coconut flour (optional, if you don't use, you can increase almond flour by 1/3 cup)
2 eggs or chia eggs
2 tbsp coconut oil
1 tsp cinnamon
1 tsp sea salt
Topping:
1 small ripe banana
1 tsp nutmeg
1 tsp flax seeds
1 tbsp pumpkin seeds
Directions:
- Preheat oven to 350 degrees. Lightly oil (I used coconut oil) a standard sized bread loaf pan.
- In a food processor, blend the 1/2 banana, dates, nut butter, and walnuts until creamy. Add coconut oil and blend again.
- Transfer to a large mixing bowl and add eggs, almond flour, coconut flour, cinnamon, and sea salt and mix until batter forms
- Pour in bread loaf pan. Slice the remaining banana length wise (down the center) and lay on top of batter, cut size up. Sprinkle with nutmeg, flax seeds, and pumpkin seeds
- Bake for 25-30 minutes or until edges are browned and center is cooked through
