Cacao Coconut Energy Bombs!


You will love these quick, easy, and healthy energy bombs! Loaded with fiber, healthy fats, and superfoods, you'll want to keep these around for your mid day snacks.




Makes: 10 small balls
Active time: 10 minutes
Inactive time: 2 - 9 hours

Ingredients:

2 medjool dates (soaked for 5 minutes)
1 tbsp cacao powder (I used Nutiva)
1 tbsp maca powder (optional but you can buy at Trader Joes)
1/8 cup soaked GF oats, soaked overnight or for a few hours (cover oats with equal parts filtered water and refrigerate)
1 tbsp flax meal
2 tbsp nut butter (I used pecan butter)
1/2 tbsp cacao nibs
2 tbsp shredded coconut 


Directions:
  1. Add dates, oats, and nut butter to a food processor or blender and blend until combined and sticky dough forms
  2. Add dough to a large bowl and add cacao powder, flax meal, maca powder and cacao nibs. If it's too dry, add water or nut butter, if it's too wet, add oats or flax meal. 
  3. Roll into 1 inch balls
  4. Add shredded coconut to a plate, rolls into the coconut to add a coconut coating
  5. Refrigerate balls for up to one week!
