Creamy Coconut & Turmeric No-Oats


Have you heard of Cauliflower Oats?

Cauliflower Oats are oats without the oats! We use cauliflower rice (cauliflower that is chopped to a rice consistency) instead of oats for a different breakfast variation. Though it may sound complicated and time consuming, it's actually a breeze. To save time, rice your cauliflower ahead of time or buy raw cauliflower rice at the market and store in your fridge or freezer.

This morning meal is creamy and cozy, and perfect for this fall season. You'll satisfy your gut with these digestive - friendly spices and healthy fats.


Serves: 1
Time: 10 minutes

Ingredients:
1 tbsp coconut oil
1 cup riced raw cauliflower (frozen works too)
1 flax egg (1 tbsp ground flax + 1/2 tbsp water)
1/2 cup dairy free milk (coconut, almond, macadamia)
Cinnamon + cardamom 
Optional: 1/2 - 1 scoop protein powder 

Optional: sweetener (I did not add any, and you may not need to either)
Toppings:
1/2 tbps almond butter
1 tsp shredded coconut
1 tsp cacao nibs
1 tbsp raw pumpkin seeds

Directions:

  1. Add coconut oil to small saucepan, then add cauliflower rice and toss on medium to low heat for about 2-3 minutes.
  2. Add cinnamon, cardamom, turmeric, “milk” and simmer for about 5 minutes, covered.
  3. Mix in flax egg and protein (if using) and stir till creamy. 
  4. Transfer to a bowl and add toppings!
