Triple Chocolate Paleo Protein Muffins
Who said all muffins lead to muffin tops? I enjoy making healthy muffins, packed with fiber, fats, and protein, and perfect for breakfast, a power snack, or even an evening treat.
These FLOURLESS muffins are vegan, gluten free, and paleo. Enjoy the chocolatey-ness!
Yields: 8 muffins
Ingredients:
3 flax eggs (mix 3 tbsp flax meal with 3 tbsp water and let sit to thicken for 5-10 minutes)
1/4 cup Nuttzo Chocolate Paleo Nut butter*
(or sub with any nut butter)
1 scoop plant based chocolate protein powder
(I like Nuzest, Sunwarrior, Aloha)
1/4 cup unsweetened almond milk
1-2 tbsp extra dark Chocolate
(I like Pascha, Enjoy Life, and Eating Evolved)
1 tsp baking soda
dash of Sea salt

* You can buy this brand at Whole Foods, Thrive Market, or other Natural Food Markets
Directions:
- Preheat oven to 350 degrees and line or lightly oil muffin trays
- Combine flax eggs, nut butter, and almond milk in a large bowl and whisk until mixed well
- Add protein powder, chocolate, sea salt and baking soda and mix until batter forms
- Spoon into muffin bins and bake for 15-18 minutes
