Sweet Potato Pancakes



Sweet potatoes are pretty easy to roast, boil, or mash for a delicious side dish, compliment to your protein, or addition to you macronutrient bowl, but have you thought about adding them into your breakfast goodies? Think pumpkin pancakes, but instead, sweet potato pancakes! Don't write SP's off for your smoothies, steel cut oats, or your morning egg/tofu hash either!


Why I love sweet potatoes:
I'll admit that recently I've been reducing my intake of these delicious yams, only in efforts to keep my carbohydrate and sugar intake in check, focusing on my GI load and index. However, it should go without saying that sweet potatoes are extremely high in Vitamin C, Vitamin A, magnesium (essential for our health that we usually forget about), multiple Vitamin B's, copper, potassium, and of course, dietary fiber.

Servings: Makes 4 small pancakes
Total Time: 15-20 minutes
(I have linked the brands I use!)
• 1 medium - large sweet potato, cubed
• 1/2 cup raw almond flour (see note below)
• 1/2 cup coconut flour (see note below)
• 1 flax egg (1 tbsp flax meal + 1 tbsp water) OR 1 large egg
• 2 TBSP nut milk (I use Ripple Unsweetened or Califia Almond)
• 2 TBSP coconut sugar OR maple syrup
• 1 tsp Organic Vanilla Extract
• Dash of cinnamon
• 1 tsp baking powder
• OPTIONAL: 1 TBSP Coconut Butter or Coconut Oil
• OPTIONAL: 1 scoop of your favorite protein powder (sometimes I add MRM Veggie Vanilla, post workout)
• Toppings: 1 spoonful nut butter (I used Trader Joe's Crunchy Almond Butter), Trader Joe's coconut shavings, and Cacao Nibs (I use Navita's Organic Cacao Nibs)
NOTE: If you prefer whole wheat flour, substitute the Almond Flour & Coconut Flour with 1 Cup Whole Wheat Flour


1) Boil your sweet potatoes. Bring a medium saucepan filled with water to a boil, add your cubed sweet potatoes and cook   7-10 minutes or until they are tender. You do NOT have to  peel your potatoes, unless you prefer to.


2) In a large bowl, add you dry ingredients and mix well. In a separate large bowl, add your wet ingredients and mix well. 


3) Once your sweet potatoes are soft, add them to a blender or food processor and blend until creamy. You can also mash them by hand.


4) Add you sweet potatoes to your wet ingredients and mix until well combined.


5) Add your wet ingredients to your dry ingredients and mix until well combined. Eye ball to determine if you need more flour or more milk. The consistency should be closer to liquid than dough.


6) Lightly oil a large skillet. Spoon the mixture onto the warmed skillet using a large spoon or spatula. You should be able to make 2+ pancakes depending on how large you like them.


7) Once they start to brown and the center is no longer wet, they should be done!


8) Add you toppings and some fruit, and you're good to go! :)


Remember - these will be only as sweet as you make them. I like mine less sweet, but adjust your quantity of coconut sugar/maple syrup for a sweeter pancake!
