Cilantro Green Leafy Pesto


A summery light pesto for any occasion! Many find cilantro to be a garnish, but it's actually a cleansing superfood. You'll often find it mixed in green juices because the herb helps reduce inflammation, detoxify the liver, and settle digestive woes.

I tossed this creamy leafy pesto with Trader Joe's organic lentil pasta and non-starchy vegetables.


Yields: 4 ounces
Time: 10 minutes

Ingredients:
1/4 cup washed cilantro leaves
1/3 cup washed arugula
1/4 cup kale
1 tbsp pumpkin seeds (can leave out or substitute with sunflower seeds)
1/2 tbsp sesame seeds
1/4 cup olive oil
1 tsp sea salt
2 tsp cumin
2 tsp coriander (optional)
Juice of 1 lemon

Directions: Add all to a food processor or high speed blender and pulse for 3-4 minutes or until creamy. If too thick, add small increments of filtered water. If too wet, add more arugula. Season to your desired taste. Enjoy!!
