Coconut Cookie Dough Bombs!

These are addicting, let me tell you! They are Whole 30 Approved, plant based, loaded with healthy fats and fiber, and the perfect hormone balancing treat. The perfect pre/post workout snack, or mid day, and of course, for dessert! Enjoy this quick energy bomb recipe.


Yields: 8 bombs
Time: 10 minutes

Ingredients:
1/4 cup raw pumpkin seeds
5 Brazil nuts
5 dates, soaked in filtered water for 10 minutes
1/4 cup coconut butter
1/8 cup raw cacao nibs
1/4 cup shredded coconut
1 tsp filtered water
Optional: 1 tbsp raw cacao powder for coating

Directions:
  1. Add pumpkin seeds, brazil nuts, and dates to food processor (or high speed blender) and blend until coarsely chopped
  2. Add coconut butter, shredded coconut, and water
  3. Blend for 2-3 minutes or until dough ball forms (be patient, it will come!)
  4. Transfer to a large bowl, add cacao nibs and mix until well combined
  5. Option to dust with cacao powder
  6. Enjoy immediately, or refrigerate for 20-30 minutes to harden the texture! 
  7. These will stay (if you don't eat them all 😋) for about a week, in the fridge.
