Sugar Free Fudge Cookies
These are my go-to sweet treats when I'm on my once/month sugar detox weeks! They are so easy, packed with healthy fats, fiber, but without any sweeteners (dates, bananas, figs, etc.). Don't get me wrong, I love baking with these fruits for a healthy alternative to sugar, but sometimes I like to make a Keto treat!

Sugar Free Fudge Cookies
Servings: 8 cookies
Time: 25 minutes
Ingredients:
1/2 Ripe Avocado
1/4 cup Unsweetened Apple Sauce
1/4 cup Coconut Butter
1 flax egg (1 tbsp ground flax + 3 tbsp filtered water, combine & let sit 5-10 min)
2/3 cup Cassava Flour (or replace with almond flour)
1/3 cup Almond Flour (or more if using in place of Cassava)
2 tbsp cacao powder
1 tbsp cacao nibs
1 tsp sea salt
1 tsp baking soda
Optional Toppings:
1tbsp raw almond butter
8 raspberries
Directions:
- Preheat oven to 350 degrees.
- In a large mixer, food processor, or blender, combine avocado, applesauce, coconut butter, and flax egg and blend until creamy.
- Transfer mixture to a large bowl and add dry ingredients and mix until dough forms.
- Spoon dough into small 8 round balls onto a non-stick (or lightly oiled) baking sheet and bak for 15 minutes or until soft but firm.
- Option to add a small dollop of the nut butter onto each cookie and top with raspberries.
- These store best in the fridge, for about a week.
