Zoodles with Cilantro Tahini Sauce
I have been focusing on hormone health, and this recipe was inspired by that, loaded with balancing vegetables.
- Cruciferous Vegetables (broccoli, cauliflower, brussels sprouts, kale) - These veggies are high in Vitamin K, B and C, all of which support our adrenal glands and combat stress. Further, they are all high in fiber which helps eliminate excess estrogen through our digestive process.
- Pumpkin Seeds - Pumpkin seeds are high in magnesium which can be depleted when we are stressed. By increasing our magnesium intake, we support our adrenal glands to lower our stress and help us relax.
- Cilantro - Cilantro is highly effective in cleaning the liver. Liver function is imperative because it helps flush out mutated hormones and support the thyroid and adrenals in hormone function. A sluggish liver is directly correlated with hormone imbalances.
Now, onto this easy plant based recipe, loaded with nutrients and vitamins:
Zucchini Noodles with Sautéed Veggies & Cilantro Tahini Sauce:
Yields: 2 servings
Time: 20 Minutes
Ingredients:
1 medium zucchini, spiralized into noodles
1 cup broccoli, chopped into florets
1 cup cauliflower, chopped into florets
1 cup kale
1 tbsp avocado or sesame oil
1/4 tsp sea salt
1 tsp cumin
Sauce:
2 tbsp chopped fresh cilantro
2 tbsp olive oil
1 clove garlic, minced
1 tsp tahini
1/2 lemon, juiced
1/4 tsp sea salt
1 tsp sesame seeds (optional)
Directions:
- In a large skillet, add avocado or sesame oil over medium-low heat. Add broccoli, cauliflower, kale, sea salt, cumin, and cook for 5-7 minutes, stirring often until veggies are lightly browned.
- Meanwhile, add all sauce ingredients, except sesame seeds, to a food processor or blender and blend until liquid.
- Toss zucchini noodles with 3/4 of sauce. Option to warm the zoodles over the stove for 2-3 minutes.
- Top with zoodles with veggies and remaining sauce & sesame seeds.
