Zucchini Noodle Pad Thai


I created this Asian inspired Pad Thai dish using zucchini noodles! I also swapped out the peanut sauce for a sunflower sauce which tasted very delicious. Feel free to add any protein source you'd like or serve with brown rice!

Servings: 5
Time: 30 Minutes

Ingredients:
(makes 5 servings)
1 pkg Broccoli Slaw (I bought from Trader Joe's)
1/4 red cabbage, chopped
2 zucchini, spiralized
1/2 cup shitake mushrooms, sliced
1 garlic clove, minced 
1 tbsp avocado oil
5-7 small bok choy

2 tbsp raw cashews
1 tbsp sesame seeds

Sunflower sesame sauce:
1 tbsp sunflower butter
1 tbsp sesame oil
1/2 tbsp coconut aminos
Sea salt (to taste)


Directions:

  1. Add garlic & avocado oil to a grill pan and sauté for about 1 minute.
  2. Add broccoli slaw, mushrooms and bok choy and toss on low heat for about 5-6 minutes.
  3. Meanwhile, blend sauce ingredients in food processor. 
  4. Add zucchini, slaw mix, and sauce to large bowl & toss. Topped with crushed raw cashews and sesame seeds!
