Fluffy Chocolate Chip Protein Packed Pancakes

Don't be intimidated to create your own batter, it's actually very easy and you likely have most of the ingredients already! I whip up healthy, superfood-filled variations of pancakes regularly, but this version is my favorite. No guilt here - packed with protein, healthy fats, low sugar, and high fiber - you won't believe you're eating pancakes. Plus they are so fluffy, gooey, and the perfect combination of sweet and salty!

I whip up healthy, superfood-filled variations of pancakes regularly, but this version is my favorite. No guilt here - packed with protein, healthy fats, low sugar, and high fiber - you won't believe you're eating pancakes. Plus they are so fluffy, gooey, and the perfect combination of sweet and salty!
Total Time: 20 minutes
Serving: 2 medium pancakes or 4 mini pancakes
Ingredients:
- 1/2 ripe banana
- 1.5 Tbsp Sunflower Butter (I used organic, sugar-free Sunbutter)
- 2 Tbsp nut milk of choice
- 1 Tbsp chia seeds
- 1 Tsp. Flax meal
- 1 Tbsp Almond Flour
- 1 Scoop Vanilla Protein (I use plant-based protein with zero additives, my favorites are MRM Usa, Sunwarrior, Aloha, and currently Moon Juice)
- 2-3 Tbsp Vegan Chocolate Chips (I use Midnight Coconut Eating Evolved or Enjoy Life Foods dark chocolate mini morsels)
- Optional topping: pure honey (I use Weddersooon pure KFactor16 Manuka honey), maple syrup, and granola (I used Purely Elizabeth pumpkin spice granola)
Directions:
- In a food processor or blender - combine banana, sunflower butter, and nut milk. Blend until creamy
- Transfer to a large mixing bowl and add chia seeds, flax meal, almond flour and protein and mix until batter forms. Stir in vegan chocolate chips.
- Lightly oil a large skillet, preferably using coconut oil.
- Spoon batter into rounds in the skillet and cook over medium heat. Turn after 2-3 minutes or until the bottom starts to brown and is firm to flip
- Top with your favorite toppings and enjoy!!
