Soft & Gooey Ginger Snap Cookies (ONLY 6 Ingredients!)


Who else loves following up dinner with some sort of dessert? It's the best, right?


The problem becomes when we grab for too many sugar-loaded sweets. So what's the deal with sugar and why do we want to be conscious of our intake? Well, there are many reasons, but the one that I want to focus on is HOW fructose (the type of sugar that our bodies do not normally produce nor necessarily require) is processed in our bodies!

Fructose (found in sweets, carbohydrates, fruits), when eaten in moderation, or small quantities (such as when we eat fruit) is stored in the liver as glycogen until we need it to stimulate energy and exertion, such as when we workout or when we wake up. However, when the liver becomes full of glycogen, fructose has no where else to go so it stores itself as fat in your body. You likely do not know whether your fructose is being stored in the liver for "fuel" or turned into fat - which is why it's important to keep your sugar intake in check!

Like I was saying, I love eating sweets, but I 99.9% of the time, I choose zero to low sugar / no additive goodies.

NOW, onto the NO added sugar,  6-Ingredient Ginger Snap Cookie Recipe. They came out so light & fluffy, not overly sweet, but a gentle sweetness with a ginger spice and nut buttery texture :)


Makes appx. 8-10 small bite-size cookies
Timing: 15 minutes

Ingredients:

  • 1/2 - 1 mashed banana (depending on sweetness desired)
  • 1/4 cup sunflower butter
  • 3 tbsp nut milk
  • 1/4 cup grain-free flour (almond or tigernut)
  • 1 tsp fresh or ground ginger
  • 100% Cacao Dark Chocolate (I use Eating Evolved Midnight Coconut or Pasha Chocolate) Morsels)

Directions:
  1. Preheat oven to 350 degrees
  2. Combine all ingredients EXCEPT chocolate in a large bowl
  3. Spoon into cookie balls onto a lined & lightly oiled (I use coconut oil) baking sheet 
  4. Bake for 8-11 minutes or until fully baked (not wet if you poke with a fork) 
  5. Add the chocolate chunk to the top of the cookie (I added it after they are baked to the chocolate did not melt within the cookie, but that's an option too)
