Coconut Chia Protein Waffles
I recently purchased a mini waffle maker from Amazon and I love it. It was really inexpensive and gets the job done!
This waffle recipe is SO easy and quick. It's vegan, gluten-free and paleo friendly. I added chia seeds for an added nutritional boost! Stacked into a layered waffle cake with strawberries and pecan butter!
Also - You can make these into pancakes if you don't have a waffle maker.
Yields : 3 mini waffles
Time: 20 minutes
Ingredients:
- 1/3 cup coconut flour
- 1/8 cup almond flour
- 2 flax eggs (2 tbsp flax meal mixed with 2 tbsp water - let sit for 5-7 minutes)
- 1 tbsp chia seeds
- 1/2 cup nut milk
- 1/2 - 1 scoop vanilla plant based protein powder (optional)
- 1 tbsp coconut butter (lightly softened)
- 1 tsp coconut oil
Topping:
- 6 strawberries
- 1 tbsp nut butter of choice (for topping - I used Pecan Butter)
- Granola (optional - I used Lark Ellen Sprouted Grain Free Granola)
Directions:
- In a large bowl, mix all dry ingredients (except topping ingredients)
- Add wet ingredients, including coconut butter, and mix until well combined. If the mixture is too dry, add small increments of water or milk to make into a batter-like consistency
- Oil your waffle maker on the top and bottom (I used coconut oil)
- Pour mixture into waffle maker, close and let cook for 4-5 minutes or until waffle has browned and can be easily removed. Repeat for all three waffles
- Add the toppings and enjoy!!
