Dark Chocolatey Banana Bread
Everyone needs a basic banana bread recipe, right? Well I seem to throw cacao chocolate into everything, so my basic banana bread is a Chocolatey one 😃
This banana bread mix is made from scratch. It's gluten-free, grain-free, and dairy-free! The texture is thick, soft, and a bit grainy (which I like!).
Yields : 8 slices (1 8x4 loaf pan)
Time: 30 minutes
Ingredients:
- 1 ripe banana
- 1/4 cup nut milk
- 1/2 tbsp coconut butter
- 1/8 cup coconut flour
- 2/3 cup almond flour
- 2 tbsp flax meal
- 2 tbsp raw coconut sugar
- 1 tbsp coconut oil
- 1 pasture - raised organic egg (I used Vital Farms)
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 cup dark chocolate or cacao (I used 100% cacao morsels from Pascha Chocolate)
- Sea salt
- Optional: 1 tbsp psyllium husk (adds fiber and texture)
Directions:
- Preheat oven to 350 degrees. Lightly oil a 8x4 bread loaf pan with oil (I use coconut oil)
- In a food processor or blender, combine banana, nut milk, coconut butter, and coconut oil and blend until creamy
- In a large bowl, combine dry ingredients (except chocolate & sea salt) and mix. Add banana mixture and egg and mix until bread batter forms. Fold in chocolate
- Pour batter into bread loaf pan and spread evenly
- Sprinkle sea salt over the top
- Bake for 18-21 minutes or until edges are brown and inside is firm
- Enjoy with nut butter or any topping! Shown is my favorite Pecan Butter by Georgia Grinders!!
