Creamy Cashew Honey Butter
Nut butters are pretty easy to make at home, if you have a little bit of patience! I find cashew butter to be the easiest to make on your own, as cashews are naturally softer and creamier so they blend very nicely.
I sometimes add coconut oil, cinnamon, or honey (like in this recipe) to assist in the blending process, but simple raw cashew butter is great too!
Makes: 6 - 8 oz.
Time: 20 - 30 minutes (plus 2 - 3 hours soaking time)
Ingredients:
- 2 - 3 cups raw (unsalted) cashews
- 2 cups water
- 1 tsp honey or maple syrup (I use Wedderspoon pure manuka honey with kFactor16)
- 1 tsp cinnamon
- 1 tbsp cacao nibs (for topping)
Directions:
- In a large bowl, add cashews and water and let soak in a cool, dry place for 2-3 hours (or overnight) to soften the cashews
- Once soaked, drain cashews from the water and add to a blender or food processor (food processor or Vitamix is easier as you leave it blending on it's own)
- Add honey and start blending. Option to add small increments of water or coconut oil to speed up the process. This should take 20-30 minutes to become creamy.
