Creamy Cashew Honey Butter


Nut butters are pretty easy to make at home, if you have a little bit of patience! I find cashew butter to be the easiest to make on your own, as cashews are naturally softer and creamier so they blend very nicely.

I sometimes add coconut oil, cinnamon, or honey (like in this recipe) to assist in the blending process, but simple raw cashew butter is great too!


Makes: 6 - 8 oz.
Time: 20 - 30 minutes (plus 2 - 3 hours soaking time)

Ingredients: 
  • 2 - 3 cups raw (unsalted) cashews 
  • 2 cups water
  • 1 tsp honey or maple syrup (I use Wedderspoon pure manuka honey with kFactor16)
  • 1 tsp cinnamon
  • 1 tbsp cacao nibs (for topping)

Directions:
  1. In a large bowl, add cashews and water and let soak in a cool, dry place for 2-3 hours (or overnight) to soften the cashews
  2. Once soaked, drain cashews from the water and add to a blender or food processor (food processor or Vitamix is easier as you leave it blending on it's own)
  3. Add honey and start blending. Option to add small increments of water or coconut oil to speed up the process. This should take 20-30 minutes to become creamy.
  4. Enjoy!
