Avocado Pumpkin Seed Hummus


While on Whole 30, I developed a new love for pumpkin seed hummus (instead of using legumes). I tried a few variations, including this avocado recipe! It's creamy & savory!


Yields: 12 ounces
Time: 20 active, 30 inactive

Ingredients:
3/4 cup pre-soaked raw pumpkin seeds (soaked for 30 minutes to help with digestion)
1/2 avocado 
1/4 cup tahini
3 tbsp olive oil
1 clove garlic, minced
1/2 lemon
Sea salt, cumin, cayenne pepper to taste
Directions:
  1. Add drained pumpkin seeds to a food processor and pulse until crumbled and seeds start to form a cream
  2. Add remaining ingredients and blend until creamy and desired consistency (I kept my thick, but can make it smoother if you prefer)
