Brownie Batter Energy BItes


I'm obsessed with making energy / fat balls. They are the perfect size, full of healthy fats and superfoods, and make for the best snack, dessert, smoothie topper, etc. Plus they are so easy to make, almost any combination makes for a delicious ball.

This one is for my brownie lovers :)


Yields: 10-12 small balls
Time: 10 active, 1 hour inactive

Ingredients:
2 soaked dates (I like to soak my dates for at least 6 hours, but if pressed for time - try for 20-30 minutes)
5 Brazil nuts
1/4 cup pumpkin seeds (or nuts of choice)
1/4 cup coconut butter
2 tbsp sunflower butter 
2 tbsp cacao powder
2 tbsp cacao nibs
dash sea salt 
Optional: superfoods or adaptogens (Maca powder, reishi, etc)

Directions:
  1. Add pitted dates, nuts, and seeds to food processor and pulse until crumbly.
  2. Add remaining ingredients (except nibs) and blend into dough forms (should be thick but soft from the coconut butter)
  3. Transfer to a large bowl, add cacao nibs and mix well. The dough may feel oily, but it will harden in the fridge
  4. Form into small balls and store in the fridge for at least 20 minutes. Keep in the fridge for up to 1 week.
