Energy & Recovery Beet Bliss Balls


As I've mentioned, I make some variation of energy / fat / bliss bombs ever weekend because they are so easy, nutritious, and delicious any time of the day. I like this one particularly for a muscle recovery snack. Packed with beet powder, the healthy fat bomb supplies amino acids and minerals that your body needs to rebuild and provide energy. That's why beets are endurance athletes best friend!


Yields: 12-14 balls
Time: 10 active, up to an hour inactive

Ingredients:
6 dates, soaked in warm water for 15 min - an hour
1/4 cup raw pumpkin seeds
2 tbsp Chia Seed 
1/4 cup flax meal 
1/4 cup coconut butter
2 tbsp raw beet powder (I like MRM brand)
2 tbsp cacao nibs
1/4 cup dark vegan chocolate (you won’t need it all so you can keep the melted chocolate for something else too)
Directions:
  1. Blend all ingredients in a food processor until dough forms. If it’s too powdery, add very small increments of water (oil will separate but that’s okay).
  2. Transfer to a bowl, add cacao nibs and mix well. 
  3. Form into small balls, and refrigerate for about 20 minutes to harden. 
  4. Meanwhile melt the chocolate over the stove on low heat, stirring constantly. 
  5. Drizzle with a spoon over the balls! Store in the fridge and enjoy
