Grain-Free Granola Crackers (paleo, plant based)
Words can't explain how addicting these crackers are! They are basically granola bars but thinner and I cut mine shorter than a regular granola bar. They are sweet, salty, and drizzled with chocolate! You have to try this superfood nutty recipe. You can also crumbled it up for a granola topper. Enjoy!
Yields: Approx. 15 small crackers
Time: 30 minutes
Ingredients:
1/3 cup raw almonds*
1/2 cup raw pumpkin seeds*
1/3 cup raw cashews*
1/4 cup flax meal
1/8 cup flax seeds
1 tbsp chia seeds
1/4 cup shredded coconut
1/3 cup coconut butter
3 tbsp pure maple syrup (best if locally produced - like from your Farmer's Market)
1/4 cup cacao nibs
1/4 cup cacao powder
1/4 cup (or 1/4 bar) extra vegan dark chocolate (I used Eating Evolved Midnight coconut but also like Pascha Dark Chocolate and Enjoy Life)
Sprinkle sea salt
1/2 cup raw pumpkin seeds*
1/3 cup raw cashews*
1/4 cup flax meal
1/8 cup flax seeds
1 tbsp chia seeds
1/4 cup shredded coconut
1/3 cup coconut butter
3 tbsp pure maple syrup (best if locally produced - like from your Farmer's Market)
1/4 cup cacao nibs
1/4 cup cacao powder
1/4 cup (or 1/4 bar) extra vegan dark chocolate (I used Eating Evolved Midnight coconut but also like Pascha Dark Chocolate and Enjoy Life)
Sprinkle sea salt
*Note: I usually soak my nuts and seeds for at least 30 minutes before using to aid in digestion, but this is optional.
Directions:
- Preheat oven to 350 degress
- Blend almonds, cashews, and pumpkin seeds in blender until crumbled but not powder
- Move too a medium mixing bowl and add the rest of ingredients (EXCEPT chocolate and sea salt)
- Form into a dough ball (may need to use your hands)
- Spread evenly onto a lined baking pan about 1/4 inch thickness
- Sprinkle sea salt over the top, and bake for 15 minutes. Edges will brown, but make sure not to burn! Let it cool for about 10 minutes.
- Meanwhile, heat chocolate in a small saucepan over low heat stirring continuously to prevent burning. Turn off heat once melted.
- Using a spoon, drizzle chocolate over the bar, and refrigerate for 20 minutes. Cut into small bars (cracker size) and enjoy!
