Carrot & Goji Berry Cookies


Whether the weather is on board or not, Spring is in the air!

I associate April with Carrots, probably because we relate bunnies with the holiday and month 😉. I’ve been incorporating these beta-carotene rich veggie into my pancakes, muffins, noodles, and these soft and simple cookies! I added the antioxidant boosting Goji berry for a powerful cookie to support your immune system and skin health!

Yields : 8 cookies
Time: 25 minutes

Ingredients:
1 long organic carrot (peeled)
1 tbsp date paste (soak handful of pitted fresh dates in hot water for 5 minutes. Purée dates with 1-2 tbsp is the water into paste)
1 chia egg (1 tbsp chia mixed with 3 tbsp water and let sit to thicken)
1/2 cup almond flour
1 tbsp tahini
1 tbsp goji berries
1 tsp cinnamon
1 tsp maca powder (optional)
1 tsp baking powder

Chocolate drizzle:
2 tbsp dark chocolate chips
1 tsp coconut oil

Directions:

  1. Preheat oven to 350 degrees
  2. Grate carrot OR finely chop in food processor
  3. Combine all wet ingredients (including carrot) in a large bow and mix well
  4. Add dry ingredients and combine into batter
  5. Spoon batter into small balls into lined or lightly oiled (I use coconut oil) baking sheet and bake for 15-18 minutes or until cooked through (toothpick comes out clean)
  6. Meanwhile, melt chocolate with coconut oil in a small sauce pan over low heat, stirring constantly 
  7. Drizzle chocolate over baked cookies and enjoy! 
These will last in the fridge for a week or freezer for longer!
