Carrot & Goji Berry Cookies
Whether the weather is on board or not, Spring is in the air!
I associate April with Carrots, probably because we relate bunnies with the holiday and month 😉. I’ve been incorporating these beta-carotene rich veggie into my pancakes, muffins, noodles, and these soft and simple cookies! I added the antioxidant boosting Goji berry for a powerful cookie to support your immune system and skin health!

Yields : 8 cookies
Time: 25 minutes
Ingredients:
1 long organic carrot (peeled)
1 tbsp date paste (soak handful of pitted fresh dates in hot water for 5 minutes. Purée dates with 1-2 tbsp is the water into paste)
1 chia egg (1 tbsp chia mixed with 3 tbsp water and let sit to thicken)
1/2 cup almond flour
1 tbsp tahini
1 tbsp goji berries
1 tsp cinnamon
1 tsp maca powder (optional)
1 tsp baking powder
Chocolate drizzle:
2 tbsp dark chocolate chips
1 tsp coconut oil
Directions:
- Preheat oven to 350 degrees
- Grate carrot OR finely chop in food processor
- Combine all wet ingredients (including carrot) in a large bow and mix well
- Add dry ingredients and combine into batter
- Spoon batter into small balls into lined or lightly oiled (I use coconut oil) baking sheet and bake for 15-18 minutes or until cooked through (toothpick comes out clean)
- Meanwhile, melt chocolate with coconut oil in a small sauce pan over low heat, stirring constantly
- Drizzle chocolate over baked cookies and enjoy!
These will last in the fridge for a week or freezer for longer!
