Green as Green Pasta Bowl


I loaded up this fiber and protein packed pasta with the greenest of green pestos and crispy veggies. You can use any pasta you like, I used Explore Cuisine Black Bean Spaghetti in this recipe, but I also love Banza brand. Both of these pastas are made from beans, and as it compares to wheat pasta, they are higher in fiber, protein, and lower in net carbs compared to regular pasta.





Yields: 3-4 servings
Time: 20-25 minutes

Ingredients:
1 pkg pasta (I used Explore Black Bean Spaghetti)
2 handfuls asparagus (trimmed and chopped)
1 leek (trimmed and sliced)
1 cup broccoli (chopped)
1/2 tbsp avocado oil (or high-heat oil of choice)
Pesto Recipe

Directions:

  1. Make pasta according to directions (boil water, add pasta, stir until tender, but not overcooked)
  2. While pasta cooks, in a large wok or skillet, add veggies and sauté for 5-7 minutes or until they start to crisp
  3. Once pasta has cooked, drain and add to skillet with veggies and toss
  4. Add pesto & enjoy!
