Sprouted Nutty Granola
I love making this homemade simple granola, packed with healthy nuts and made with real fruit and honey. It's so easy too!
I use soaked oats in this recipe, and anytime I eat oats. By soaking them overnight or for 1-2 hours, the fibrous oats become much easier to digest. I'd suggest soaking nuts, seeds, legumes and quinoa too, all of which can be hard on digestion if you have any sensitivities.
Enjoy this granola over yogurt, smoothies, fruit, etc.!
Time: 25 minutes
Ingredients:
1/2 cup sprouted pumpkin seeds (I prefer sprouted, but raw unsprouted seeds work too)
6-10 raw macadamia nuts
2 dates
1 tbsp sunflower butter
1/2 cup GF oats (soaked overnight or for 1-2 hours, drained)
1 tbsp chia seeds
1 tsp coconut oil
1-2 tsp raw honey (I used Wedderspoon Manuka K-Factor 16, can substitute with maple syrup)
2 tsp cinnamon
Directions:
- Preheat oven to 350 degrees
- In a food processor, combine pumpkin seeds, macadamia nuts, and dates and pulse until crumbly
- Transfer to a large bowl, add drained oats and nut butter and mix well
- Add honey, chia seeds, and cinnamon
- Line a baking sheet with foil and / or the coconut oil
- Lay the mixture flat onto the sheet and bake for 17-20 minutes or until crispy
- Allow to cool, enjoy!
