Sunflower Bliss Balls
Sunflower butter is a great option for anyone sensitive to nuts and nut butter. Even if you aren't sensitive to nut butter, Sunflower Seed Butter is a delicious alternative. It's loaded with healthy fats, and low in sugar and net carbs, plus the texture makes it ideal for energy balls, baking, etc! I use it for everything 😊
These bliss balls are easy and light, packed with protein, healthy fats and fiber. I used dates for sweetness, and all real ingredients, like always! Enjoy!!
Yields: 6-8 1" balls
Time: 5 minutes
Ingredients:
1/3 cup pumpkin seeds (I use sprouted pumpkin seeds)
2 medjool dates (pitted)1.5 tbsp organic sunflower butter 1/2 tbsp coconut oil or butter
1 tbsp cacao nibs
1 tsp cinnamon
1 tsp cardamom (optional)
1 tsp psyllium husk for extra fiber (optional)
Directions:
- In a food processor, add pumpkin seeds and dates and pulse until crumbly.
- Transfer to a medium mixing bowl and add remaining ingredients and mix until dough forms
- Roll into small balls, refrigerate and enjoy!
- These will last about a week in the fridge and longer in the freezer!
