Cauliflower "Fried" Rice


Need a really quick and nutritious dinner or side dish? Try this Cauliflower "Fried" Rice!

Boasting with anti-inflammatory benefits of turmeric and tossed with veggies and lentils, you'll love this easy recipe.



Yields: 3-4 servings
Time: 15 minutes

Ingredients:
1 Cauliflower head
1/2 cup chopped carrots
1/2 cup green peas (frozen and thawed will work)
1 cup cooked lentils (I use sprouted, any lentils will work)
1 tbsp coconut oil
2-3 tsp turmeric
2 tsp sea salt
2-3 tsp cumin
1 tsp black pepper

Directions:

  1. In a food processor, add cauliflower (cut into large chunks) and pulse until riced
  2. Add coconut oil to a large wok and bring to medium heat
  3. Add carrots and peas into the wok and toss for 4-5 minutes or until veggies start to tendorize
  4. Reduce heat to low. Add cauliflower and seasonings to wok and toss for 2-3 minutes 
  5. Lastly, add cooked lentils and stir to combine
  6. Add any additional seasoning as desired
  7. Enjoy!
