Kale & Avocado Pumpkin Seed Pesto


I've been using this creamy green pesto for everything from pizzas to noodles to dip, so it's versatile and easy!

Packed with nutrients, seeds, it's light and refreshing yet savory and satisfying.

All you need:
Kale
Pumpkin Seeds
Avocado
Garlic
Oil
Lemon
Sea Salt



Yields: 8 ounces
Time: 15 minutes

Ingredients:
1 cup organic kale
1/2 avocado
1/2 lemon
1 tbsp pumpkin seeds
1/4 cup filtered water
1 garlic clove minced
1 tbsp olive oil

Directions:

  1. In a food processor, add kale, avocado, pumpkin seeds and pulse until seeds crumble
  2. Add remaining ingredients and pulse for 4-5 minutes until creamy, add more water if it's too thick
  3. Enjoy on your favorite pasta, zucchini noodles, veggies! This will keep in the fridge for up to a week!
